Zucchini & Tofu Pasta

This is a classic example of swapping certain ingredients to make a healthy fulfilling meal!

Ingredients:

  • 1 box Banza pasta (choose your noodle!)

  • 1 block firm tofu (pressed to remove water and chopped to 1” pieces)

  • 1 zucchini (sliced & quartered)

  • 2 Tbsp pesto

  • 1/4 cup shaved or grated parmesan

  • 1 Tbsp grated parmesan

  • 1 tsp Trader Joe’s Green Goddess seasoning

  • 1/2 tsp garlic powder

  • 1/4 C olive oil (can use flavors if you like)

  • 1/4 C white wine

Directions:

  1. Press water out of tofu. I have a tofu press from Amazon that I love, but you can use paper towels. Cut tofu into 1” pieces and put in a bowl. Drizzle with 1 Tbsp olive oil, 1 tsp green goddess seasoning and 1 Tbsp grated parmesan. Toss to coat and then put in air fryer basket for 20 minutes at 400 degrees. Stirring every now and then.

  2. Cook pasta according to directions on box, but go with the lesser number of time. Put in strainer and rinse with cold water. Using the same pot, cook zucchini over medium heat with 1 Tbsp olive oil, 1 tsp green goddess seasoning and 1/2 tsp of garlic for about 3-4 minutes.

  3. Return pasta to pot with zucchini, reduce heat to low and add in 2 Tbsp pesto, 1/4 C wine, and 1/4 C parmesan. Stir frequently to combine - about 5 minutes.

  4. Throw in a bowl together and top with more parmesan, red pepper flakes or sriracha, or chopped pistacios! Enjoy!
