Air-fryer Salmon

This is one of my absolute FAVORITE easy weeknight go-to meals! Total of about 20 minutes and you are ready to eat.

The amount of salmon depends on how many you are feeding. Typically 4-6 oz/person is a good amount.

I like to use spinach and tomatoes in the Right Rice, but really whatever veggies you like can be added! The more the merrier!

Cook salmon to your liking. I prefer it to be done with no raw left, so I cook mine 12-15 minutes depending on the size and then pull apart with a fork to check it!

Final product! A well-balanced easy weeknight meal that everyone will love! Top with a dash of feta or parmesan or add some sriracha for a little kick!


Air-fryer salmon with right rice & veggies

Time: 20 minutes

Ingredients:

Salmon - 4-6 oz/person

Pesto - ~2 Tbsp

Parmesan - 1-2 Tbsp grated

Right Rice packet- I used Garlic & Herb

Spinach - 1-2 cups chopped

Cherry Tomatoes - 1-2 cups diced

Optional Toppings: feta, parmesan, sriracha

How to:

Start with the Salmon. Add a thin layer of pesto to the top of the salmon. Then sprinkle the parmesan on top. Place on a baking sheet if putting in the oven and preheat to 400 or place in air-fryer and turn to 400. Set timer for 12 minutes to start and then cook more if needed. Meanwhile, cook Right Rice according to package instructions and chop the veggies. When the Right Rice is cooked, add the veggies and turn to low to make spinach wilt and heat up the tomatoes. Once Salmon is done, crumble on top of Right Rice mixture and top with option toppings! ENJOY!!!

Trader Joe’s - has fantastic Salmon (BBQ cut or boneless filet) and their pesto is my absolute favorite!!
