Ranch Style Chicken Salad

Love chicken salad but don’t want the calories and fat in a typical chicken salad? Same. This recipe is packed with healthy, flavorful ingredients and is PACKED with protein!


ingredients

  • 3 cups rotisserie chicken

  • 2/3 cup fat free greek yogurt

  • 1 Tbsp dijon mustard

  • 1 cup diced cucumber (seeds removed)

  • 3-4 stalks of celery, diced

  • 1 tsp dried dill

  • 1 tsp garlic powder

  • 1 tsp onion powder

  • 1 tsp Alessi dipping spices

  • black pepper/red pepper flakes to taste

Instructions

  • Pull apart chicken into small pieces and put in a bowl. Chop cucumber and celery and add to bowl. Throw all other ingredients into the bowl and mix well. Refrigerate and serve chilled with crackers, toast, etc. Or, just eat it with a fork! The veggies give this salad a lovely crunch!
